If it was in a dining room, i'd be much more conscious of the roe flying everywhere, but this is a more casual event. And the ones on the white plates were for my face, so i didn't worry about doing cutbacks on the plates. ;) Sincerely, thank you for critiquing. Then you quarter it (i also cut the butt fat off for rendering, can never have enough rendered duck fat) Then you make sure you label your throw away parts so no one mistakes them for cookies or something. Then you put the meat in a brine for a few hours. I can't give you all my ingredients, but i can tell you there is rum and pineapple juice. Then you steam it for like 40 minutes or so... When you're done, make sure you boil all this water away for the sweet sweet duck fat. Then you might cut out the ribs from the breast and take the duck butt, and throw it in with some delicious tri colored baby potatoes. Then when all is said is done, you might take some of the brine, mix it in with some honey and reduce it for 15 or so minutes. Then roughly mash the potatoes that have been cooking in the duck fat, and get some crusty bread, and toast them (also with duck fat) and plate it simply because you're eating duck mother fucker, and you don't need no fancy plates. I think theirs a circuit issue but it takes forever to boil water, literally like 15 mins, so yeah no way to get exact cooking on hard boiled eggs. dont taste bad though.
