Likewise, I left the fat on in its entirety to save the flavor, but as the pic illustrates, it didn't end up too pretty. It was my first time ever cooking a steak on cast iron so it wasn't a bad start,. If you have any tips on selecting cuts or cooking without a grill, feel free to share...
