This conversation reminded me of this Indian food restaurant in Singapore called Lagnaa... Barefoot Dining that has a chili challenge. https://www.lagnaa.com/chilli-challenge When I ate there I did level 6/10 and got to put my name on a wooden clothes pin on the wall. It was definitely really spicy. Now if you do that level you get invited to a full moon chili party?!?! Sounds spicy. Washed it all down with some of these. Maqlooba is an Arab dish I was raised on, there are several variations, it's similar to Russian Plov or a Biryani. Basically beef, onions, cauliflower, rice, salt and a shitload of black pepper. Bedouin people make this in the morning, wrap it in a blanket, move wherever they're headed, unwrap it and bam, dinner. I use towels to wrap it. Qulubuh means to flip, maqlooba is a thing that's been flipped--so after unwrapping you flip it over and lift the pot off for a tower of rice, veg, and super tender meat. I think you may have mentioned that before. I am going to try and make this dish some time. If you have a preferred recipe let me know. My mother also grew up a missionary kid, surrounded by other MKs, so world cuisine was always around growing up. I'll type up a recipe for what I do, there are so many variations in protein and veg and flavoring options.
