Its not so much the restaurant as it is the chef himself. i started bussing at this restaurant(which is a thai place, they just threw a sushi bar in for shit n giggs apparently) like a month ago, and the sushi chef decided he wanted to teach me how to make sushi, cause its kinda been my dream since i was like 6. its really an informal thing, i just happened to be in the right place at the right time. and sushi guys make waaay more than bussers, plus free sushi, which is fuckin badass 1 Quote Link to comment Share on other sites More sharing options...

I'm pretty sure wasabi was originally used to preserve and chemically cook the sashimi but I'm no expert. When I went to Japan I hit this super nice spot where everything was fresh, like hours ago it was swimming fresh. They had fresh wasabi which looked like the roots of some aquatic plant and a grinder for it. So good, one of the best meals I've ever eaten hands down. Let Professor Pornbooth teach... -The average sushi chef salary is $40,000 your likely to make $10-20,000 more than that if you stick with it. If it were really easy it would probably be a $10-15,000 a year job. -Excellent knife skills are a must, must be quick and have the knowledge of how to cut vegetables every edible fish there is. (it involves a lot more than just hacking away with a dull crappy kitchen knife) -gotta be able to cut and plate garnish... A brief sushi chef job summary... -The fully trained sushi master is not just a highly skilled cook, but also an entertainer, who displays his culinary dexterity to his customers while exchanging banter and providing information on the sushi he is preparing. He will be able to pick up almost the same amount of grains of rice each time he makes a piece of sushi, while at the same time imparting his encyclopedic knowledge of sushi to customers. Sushi chefs are also responsible for selecting the best ingredients from the market. There are a ton more things involving a sushi chef but i dont think 12oz has the bandwith to cover it, lol and i dont have all day. If you still think its an easy job why dont you become one its a damn good paying job to do nothing and not have to learn anything.
