Hell yeah. Six wings or a whole ass roaster? I went to buffalo wild wings back in January and was disgusted at how much money I spent on chicken in one sitting.

I did not look enough to find the whole episode but Julia has one where she explains all about the different kinds of chicken you can get and how to use them.

 

Now the idea of getting different kinds of chicken at the grocery store is bordering on nonsensical, the organic to conventional difference has been blurred to the point of being a technical distinction rather than a substantial difference. 

 

About a decade ago I noticed that the available cuts of chicken were decreasing as well, no more cut up chicken, no quartered roasters, no wings, lots of boneless skinless breast which I have no interest in or whole chicken. For a while you could go to the butcher and just have them cut up the chicken for you but now that level of service and skill is harder to find, even in "fancy" stores. 

 

I went to a boutique butcher shop the other day and found a young person who did not really know anything about anything behind the counter but since I was paying top dollar I thought I would ask if they had any idea about the shortage of chicken parts and the trend toward such in recent years. They in turn looked at me like I was a hundred and twelve years old, and started speculating about Covid impacts on the processing facilities. 

 

The air fryer angle is an interesting one that I had not considered, perhaps our thirst for kitchen gadgetry will fuel a resurgence in cooking other cuts of meat and in turn we will begin to relearn our disappearing foodways through tictoc videos of swinging titties and habenero hot wings.
