I just spent two days marinading, forcing dry-rub in to, and grilling to perfection a beautiful tri-tip. I let it rest like you're supposed to, then proceed to carving. Looks like a steakhouse billboard and I'm so happy... Until I take a test bite. The flavors of dry-rub, char and putrid rotten meat slapped me in the mouth. I just cut it up and split it between the dogs. Pizza is on the way. I am so disappoint.
