went out to this breakfast/lunch spot with the chica. i had the lox with cream cheese and capers it was supposed to have a bagel but they had ran out already so i opted for swiss peasant bread which is made fresh everyday along with every other bread they use. the girl had eggs florentine i've had it before and it is fucking awsome

OK, I got to have pork tamales with red sauce this morning. FUCK YEAH!!! My mom killed it on the red sauce.. Made from scratch with two different kinds of chili. For some reason everyone else likes the green sauce. Red is where it's at. The flavor is a lot more complicated and full. It that makes sense..

I DONT KNOW HOW YOUR ROLLS R DOWN THERE.

U NEED A GOOD ROLL, THATS THE MOST IMPORTANT INGREDIENT...

GET THIN SLICED RIBEYE MEDALLIONS FROM YOUR LOCAL BUTCHER.

IT SHOULD BE ONLY SLIGHTLY FATTY, U MAY HAVE 2 TRIM DOWN YOURSELF.

U R GONNA HAVE 2 ASK FOR THEM 2 CUT IT LIKE THIS PROB.

CUT A WHITE ONION INTO THIN STRIPS AND FRY TILL BROWN.

COOK STEAK ON A FLAT GRIDDLE OR A PAN WITH TOUCH OF OIL...

ADD ALL INGREDIENTS.

I WOULD GO AMERICAN CHEESE, THE SECRET IS WARM A LIL BIT OF WHOLE MILK IN A POT AND MELT WHITE AMERICAN CHEESE INTO IT, IT WILL CREATE A WHITE CHEESE WHIZ THAT U CAN POUR ON2 YOUR STEAK AND DISTRIBUTE EVENLY...

in my pancake thread a while back someone offered to send me some choice 100% all natural maple syrup. i appreciate these type gestures even if its not for myself.

So I purchased a rack of beef ribs....

 

 

 

 

I rubbed one out for myself then made a rub of equal parts of paprika, salt, pepper, and minced garlic for the ribs. I covered them in foil then placed them in the fridge for four hours(overnight is best).

Then I threw them on the grill while not giving a fuck it was 19degrees outside. I turned them often so all the fat juice would catch fire and give em a nice browning, about 10 minutes. I poured about a cup and a half of water on the bottom of the pan(i put a baking cooling rack in there so they would stay elevated), covered with foil and put them in the oven preheated at 275.

I prepped my secret famous bbq sauce, brought it to a boil and sent it on its way for its hour and a half simmer.

Just over 2 hours later I had already pureed the bbq sauce then pulled the ribs from the oven.

Next I cut the ribs into singles and dipped them generously in the sauce and placed them back in the oven for another 20 minutes or so.
