    The proper way is dry ice in a cooler shipped overnight. But that is unreasonably expensive.

    It’s kinda ghetto but I prefer to do mine straight on the burner, no pan. Works best with a gas stove but you can do it with those electric style ones with the spiral looking burner too. Cant do it with the glass top electric like we have now so I use One of these flat lo-pro cast iron work as a griddle
