!@#$% Posted January 3, 2003 Share Posted January 3, 2003 i've been on the peanut butter and chocolate kick lately.. the cookie recipe in the tollhouse cookie thread is better but i didn't wanna be redundant... (stolen from gourmet 1996) CHOCOLATE PEANUT-BUTTER LAYER BROWNIES These thick, chewy brownies have a peanut-butter base and a chocolaty top. 2 ounces unsweetened chocolate, chopped 1 stick (1/2 cup) unsalted butter, softened 1 1/4 cups sugar 3 large eggs 1 teaspoon vanilla 2/3 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 cup chunky peanut butter 3 ounces fine-quality bittersweet chocolate (not unsweetened), chopped _fine, or 1/2 cup semisweet chocolate chips Preheat oven to 350°F. and butter and flour a 9-inch square baking pan, knocking out excess flour. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate, stirring, until smooth and remove top of double boiler or bowl from heat. Cool chocolate to room temperature. In a large bowl with an electric mixer beat butter and sugar until light and fluffy and beat in eggs, 1 at a time, beating well after each addition, and vanilla. Into a small bowl sift together flour, baking powder, and salt and beat into butter mixture just until blended well. Divide batter between 2 bowls. Whisk peanut butter into batter in 1 bowl. Whisk melted chocolate into batter in other bowl and stir in chopped chocolate or chocolate chips. Spread peanut-butter batter evenly in pan. Drop chocolate batter by large spoonfuls onto peanut-butter batter and spread carefully to form an even layer. Bake brownies in middle of oven 35 to 40 minutes, or until a tester comes out with crumbs adhering to it. Cool brownies completely in pan on a rack before cutting into 16 squares. !@#$% Posted January 6, 2003 Share Posted January 6, 2003 banana peanut butter quickbread... homemade bread is the shit...but who the fuck has time? i like quickbreads instead.... 1/4 cup butter or margarine 3/4 cup sugar 2 eggs 1/3 cup peanut butter 2 ripe bananas (mashed) 2 cups flour 1 tsp baking soda peanut butter or chocolate chips if you want cream butter and sugar beat in eggs, one at a time, blend well beat in peanut butter and mashed bananas mix flour and baking soda blend flour mixture into butter/eggs/sugar mix mix in chips, or nuts, if you wanna pour batter into a loaf pan or 3 mini loaf pans bake (one regular loaf pan) at 350F for one hour (check after 50 minutes, test with a toothpick or fork, done if tester is clean) or bake mini-loaf pans at 350F for about 45 minutes..test for doneness.. TESTING BAKED GOODS when cakes, brownies, quickbreads or any dessert with a cake-like texture or consistency are baked, they can be tested for doneness easily while baking. as the baked good approaches its recommended baking time, pull the thing out of the oven halfway..insert a toothpick, sharp thin knife, or fork into the middle of the thing...pull back out again..if the tester has gooey, doughy, unbaked stuff on it, the thing is not done..if the tester is removed clean, the thing is done baking.. **use caution if your baked good has chips in it though..the chips will be melted regardless, so if you're tester passes through one, it may appear (to the untrained eye) that it's unbaked dough..when really it's just melted chip.. !@#$% Posted March 3, 2003 Share Posted March 3, 2003 world's best home fries i hope i haven't posted this before..maybe in another thread..this takes awhile, but it is SO worth it..or.... make a bunch of these potatoes, save the rest for the next morning... red or white potatoes, good n clean garlic cloves rosemary salt n pepper olive oil oven at 425degrees cut the potatoes into (managable sized) quarters or chunks, smash the garlic cloves well (or dice) spread olive oil generously on a cookie sheet put potatoes on sheet, spread garlic, rosemary, salt and pepper all over potatoes (mix in a bowl before putting on sheet for extra good coverage) bake for 40 minutes heat a pan on high with olive oil put in potatoes when oil is hot add extra garlic (or garlic powder) and exxxtra pepper, add CAYENNE!! for a really spicy yum.. cook potatoes, turning or flipping often until the outside is crispy (about 5-10 minutes depending on how well the oven cooked 'em) these things are ridiculously good. i used to serve them for brunch at a restaurant i worked many years ago..and they were in demand...beleee dat! i like 'em with ketchup Link to comment Share on other sites More sharing options...
!@#$% Posted April 24, 2003 Share Posted April 24, 2003 mashed potatoes i'm sure i've discussed them already..but they are fucking awesome.. i made some last night, lemme tell you....add some sour cream and truffle oil to those bitches!!! hellsyeah!! i also finally got off the paint binge and did some baking last night...coffee cake yum. streusel topping, nut and cinnamon filling, soooo good.. COFFEE CAKE!! 4 ounces nuts (walnuts/pecans) 1 tsp cinnamon 2 tblsp sugar 1/3 cup firmly packed light brown sugar 1/2 cup cake 1 tsp vanilla 2 tblsp butter (food processor needed) ....process the nuts with sugars and cinnamon...reserve about 3/4 cup..until nuts are coarsley chopped gently, briefly process the remainder of nut mix with the flour, vanilla, butter..pulsing briefly to form a crumbly mixture...streusel! 4 egg yolks 12 tblsp butter 2/3 cup sour cream 1 cup sugar 2 cups cake flour 1/2 tsp baking soda 1/2 tsp baking powder pinch of salt blend egg yolks and half the sour cream blend all dry ingrediants in a mixing bowl add the butter and the rest of the sour cream blend and aerate by mixing on a high speed for a minute or two scrape down the sides of the bowl well add the egg/s.cream mix in 3 parts. blending welll after each addition pour about 2/3 of the batter into a greased pan top evenly with the reserved chopped nuts top that with the remaining batter, in large globs over the nuts spread gently! and evenly to top the nuts with batter top the batter with the streusel bake 60 minutes @ 350 degrees Farenheit cool about 15 minutes before serving ****cake flour can be made with regular flour and cornstarch...for every one cup of flour, add about 1/4 cup cornstarch and blend well (sifting is better) to make 1 1/4 cups cake flour its worth the effort Link to comment Share on other sites More sharing options...

My next batch of Jasmine is strong enough and also very crisp. I wish I was sitting on me deck right now sipping ice tea and enjoying the company of a certain fine lady. but no.... there's no ice tea at work.
