Turn the white balance either to flash, or manually up to a warm temp, and bounce it off the ceiling or use ttl. Setting up your camera and flash to commander mode is usually the best since the on camera acts as a fill and the SB-600 is the main light source. Hitting the subject straight on from the shoe is also good if there is enough ambient light and you're not at a high aperture and 1/250 sec. For more ambient and less flash in the shot lengthen the exposure time.

I haven't ever taken any photography classes but notice acedemic photographers mainly like shots of people. I guess having more portraits and candid shots would probably help the portfolio.

The SB600 is dope, I got one a while back and still haven't played with all the features. I still need to buy the diffuser and gels kit for it, I think it's only around $20.

If what you're trying to do is a miniaturization you basically want to use the lens blur caused by the tilt to appear as though it's a macro. You have to think where a focal plane would begin and end and rotate the lens until the tilt blur mimics a short focal plane. Having a higher or lower view of the subject only works if you get that false focal plane dialed in. I like tilt shift stuff but generally use it to distort the perspective or give an overwhelming drunken feeling, I rarely go for the miniaturization effect.
