I just made up some more of my tomatoe vinegarette, and used some better plum tomatoes this time. The don't have so much insides, and they have more flesh, so they don't turn into alot of water when you food process them. Anyway, this batch is better, so I made a salad with fresh spinache as always. It was muy magnifico.

nah, it's vinegarette..... it's a dressing, I use red wine vinegar, extra virgin olive oil, a small clove, a plum tomatoe, some kosher salt, and a little bit of fresh cracked pepper for good measure. I don't really use exact amounts that I could share with you, you just kinda gotta try it and find out what's the best ratios yourself.
