Decy had me read Anthony Bourdain's Kitchen COnfidential the other week, that was interesting. I do wonder how much is exaggerated. I do know from my own brief stint in kitchens (nothing 'real' - was hired to learn from a 'proper' chef once, but he just came in and threw his fucking ego around once a week and taught me literally nothing) that it's hard work just at the shitty chain pub "kitchen" level. Maybe more cos there was almost no satisfaction that came from the churn it out and keep it heated up in advance mentality.
