I found a page of 50 ways to “spice” up your mayo. But, it was just adding different ingredients to store bought mayo to swang that tang a different way.

There are plenty of recipes for mayo online and elsewhere with slight variations for taste but the basics are an egg or egg yolk at room temp, a pinch of salt, lemon juice (or vinegar)- between 2 teaspoons to 1 Tablespoon, and 1 cup vegetable oil.  Use a food processor or immersion blender to mix first 3 ingredients, then slowly add in your oil until it's mixed in and thickened.  Will keep for a week or so.   some variations call for some garlic or dijon mustard or mustard powder.
