I have a question, do rail cars stay in the same general areas like the east coast, mid-west and the west coast or do they travel around the whole USA? Will I see art here in Utah from around the USA or mostly from here in the Midwest and west coast?

I would tend to say that the majority run on a fixed loop based on what they are used for. This could be as short as from one town to another or could involve crossing in/out of Canada or Mexico. There are also ones that are owned by companies that lease them to other companies and businesses, so they may travel around when being leased before returning to a home base. If you watch your lines enough you'll start to sense what's what.
