Duck carcass and pork neck bones for broth... half a pot of used meat and bones. I grossed people out by picking out the pork veins and throwing them at em.

Pork tenderloin

This was the broth i braised the pork tenderloin in. I got this idea from yakitori, which is japanese bbq. The sauce the brush on the chicken is actually made chicken fat, so i braised my pork tenderloin in this, then cooked it down afterwords for a delicious porky, soyey, miriny, delicious sauce, that i add to the broth for salting it.

I fully wrapped it after it was done cooking, and put it in the fridge. but minus the little amount of steaming it did in the fridge, there was no cooking in the frdge.

 

and after i cooked it down all the way, cause i concentrate it, freeze it, and use it in the future... Maybe about 4 pints of broth for the pork neck duck. And a pint of the braise.

I know a lot of the regulars in here are pro's - but honestly, the joy of cooking for me is about family, friends, and good times to be had.

I must spread rep, that statement is on point.

Still got that joy. Just apply it now to other peoples first dates, anniversaries, business deals, etc.

heres the flick of the special i ran for fri and sat nights service. damn near sold out friday night so we had to bring in more halibut. sold over forty portions over the two nights. Felt pretty damn good. Its pan roasted halibut on a hash of nettles, bunshamejii mushrooms and mint, a lemon mint vin, fava bean pesto and crispy beet "hair" cheers!
