Newer Bigger Better Posted January 5, 2012 Share Posted January 5, 2012 OK. Fish Tacos, never made them before, doing it tonight for a small function. Doing Snapper w/ green cabbage slaw & guac? I got corn tortillas - was thinking flour, but whatever. Any tips? I'm slightly worried about guac and thinking more of an avo/tomato salsa will hold together better? I know this is a big deal over there from the photos you guys have posted. I'll have flicks for talking soon. Would the fish normally be 'flaked' or is it more like 'chunks'? ONE MORE question, should I incorporate the white sauce IN the slaw, or should it be a separate addition to the taco build? Alot of people do a mix of salsa with their guac but i ALWAYS keep it seperate. If you just smash the av with a fork instead of trying to blend it, it shouldn't have any problems holding together. Corn is fine, a lot of people here do flour but just melt a stick of butter and crisp each one up in that. It'll be rad. Chunks! I'd say seperate, and i usually do purple cabbage in vinegar. But when we talk about fish tacos here, were talking about batter fried, You might be talking about straight up in which case, i would still say chunks. Haha. You want the texture of the fish to come through with the creamyness of the guac. if you flaked the fish then you'd have mushy fish with mushy guac and some crunchy cabbage. Feel me? The cost of 'safely removing' the oil from here just about outweighs what I'd make from selling fried snacks anyway. I've done a bit in pots, but they still consider that illegal so it's just not worth it for me. Chicken breasts are stuffed and crumbed, ready to go!
