Melted down and then put fridge for re-solidifcation into log shape. Kumamoto oysters for an appetizer. There was also some 31 dry aged steak that apparently i can't find the picture of. Plate: Three diff steaks (bone-in ribeye, porterhouse, and the previously mentioned dry aged) Roasted potatoes with garlic, roasted shallots, risotto, kale with the herb butter, and the carrots in reduced chicken stock. I had a prosciutto wrapped salmon w/ lemon beurre blanc a few weeks ago that was quite the business. Bed of spinach I think, maybe watercress... it was a while ago. I like my salmon cooked a lot more than most people, I would always go a white fish over salmon. Apparently it's pretty good for you though.
