SwampFightOner
The one time I was down that way I went to some spot in North Philly, which was combo cheesesteak shop/liquor store/bar. This spot was so hood that my lily white ass was like an alien to them. There was a Jadakiss song playing and I was nodding my head rapping along to some part and the lady at the counter goes "AWW, LOOK AT HIM...HE KNOWS ALL THE WORDS!" It was delicious, but they didn't offer wiz, so I still have something I need to try

Newer Bigger Better
I've actually starting trying to perfect my fry recipe... So far i got. Cut into 1/4 inch fries or so. But a little bit of variety in the sizes works Soak in water with a couple spoons of vinegar. fry in around 400 for a couple of minutes. until they are cooked but still white. take out, dry with paper towels, then FREEZE (Freezing breaks the cell walls) when ready to cook put into around 425 until they golden brown up. these fries are coming out perfect, Bubbly crispy skins, super tender and moist inside. TippinBetweenYourThighs
That's fucking right. It's absolutely amazing to me how well some of you guys eat. Whether it be homemade or local food, it all looks splendid.
Newer Bigger Better
olive oil hahaaaahahazhzh if you're talking to me it should be peanut oil or really duck fat. i try to keep rendered duck fat in my freezer for lots of reasons. Or bacon fat. Bacon fat works too but it's hard to get enough of it. duck fat is the king of all cooking fats.

RUSO
thanks.. those look great whats your procedure for applying the garlic, do you toss them before, during, after cooking, or none of the above? After cooking, I toss them while nice and hot in a big stainless steal bowl. *I parboil my cut potato's and coat them with olive oil so they cook faster in the oven.
