Those potato wedges look the goods, I too am keen on the burnt herb style. Love the burnt sage flavour at the moment, as long as there's plenty of butter. That dish I posted above is a real short braising time(20-25 minutes), if I want the flavor more infused into the chicken thighs should I just increase the liquid and the braise time? The dish has great flavor, but I think I might have used to big a pan this time around. The chicken wasn't as submerged as usual. I may answered my own question though..
