the dark horse Posted June 23, 2009 Share Posted June 23, 2009 yeah i got an unorthodox cheesesteak method. i dont use an 8 stack of sandwich steak to make mine ... nor do i have the proper bun at my disposal. however, i substitute a flank steak, which i first cook to medium rare, let it cool off, and slice it into a million tiny slivers. then i sautee those with a good bit of seasoning, butter, and a fat handful of tiny crumbs of feta, along with the green peppers, onions, and mushrooms (while i melt a generous portion of manchego on the bottom half of the bread). As these elements reach completion, i drain some of the excess butter, toss the meat and friends on the manchego-bread, and throw a couple slices of white american on top. i then melt that cheese as i toast the top half of the bread. when these steps are complete i throw it upside down on the flat top and press the sandwich flat, at which point it is full of cheese, steak, and other goodness. no one can fuck with my cheesesteak.
