Yeah, you have the standards: fried tofu, egg omlette, squash, cucumber, shrimp, eel, clam, ocotopus, squid, crab, the elusive mountain vegetable. Often veggies are served in rolls only. There are veggies used in combination with fish, for taste or color, or both. Many high end places use veggies I haven't even seen or heard of. The sky is the limit.
