Today I got passed up my favourite climb by a dude with a backpack, I couldn't match his pace. It happens occasionally. this. ive never had (or seen) a grip come completely off a bike, but ive had grips twist and it leads to tears in the grips. also never heard that hairspray tip, il have to check it out next time im putting grips on a mtb (which will probably be never, i have grip shifts and apparently almost nobody makes a decent pair of grips for a bike with grip shifts) ive used silicone glue to put on grips though, if it werent for silicone glue being a pain in the ass to work with, it would have worked nice. I used hairspray once but I used too much and that shit took like a week to dry, I haven't used it since. Basically no front mech, a singlespeed chainring (unramped I think they're called), shorter chain, 9spd cassette and rear mech. A guy a ride with runs 1x9. He's got Raceface Deus cranks in the front, just make sure you get one with the bash guard so you don't drop the chain.
