I guess all the nutrition books I've read have been by dedicated meat eaters. My main diet consists of tons of rice and pasta with chicken usually. I honestly can't remember the last time I had a meal that didn't have rice or pasta in it. The vegetable aspect is one of the main things that would keep me away from a strictly vegetarian diet.
