Off the top of my head I can really only think of two; Slapstick covering Earth Angel, and this is a tough onehere, DKM covering Gang Green's Alcohol. They're both so fucking good. Also Bouncing Souls coverof Don't You Forget about Me, which sounds basically liek the original but it's cool based on who covered it. DKM Barroom Heros, among many others also are actually covers written by the old Irish, so I guess those all count in my book. Pietasters cover of Drinking and Driving originally by The Business is rad too. There's many others but I can think of much right now.
